Is it a good idea to take model off of the master device so that I can dump
the transaction log because I have several tables that I want to span
across all databases and I cannot dump the log. If so, what is the best
way to do this?

I wouldnt take model off master. It will just make recovery of a
corrupted master device more difficult. If you need to truncate the
log, just dump master, then dump tran on master with truncate_only. No
need for the log after you just made a good dump of master.
