Trouble Creating Data Pipeline

I am trying to create a data pipeline from a database on one server to a
database on a different server and am having difficulty choosing more
than one table from which to pipe data. These are the steps I take:

I click on data pipeline icon and choose new data pipeline
Highlight Quick Select
Choose the source connection and destination connection
Click OK

A list of available tables appears. From this list, I am unable to
select more than one table for the pipeline. Shouldn't I be able to
select all of them if that is what I need? After I highlight any one of
the tables, I am unable to get the list back. I've tried to hold the
shift key down and select all of the tables, and/or hold the control key
down to no avail.

Any instructions/suggestions would be appreciated.

Try using SQL Select instead of Quick Select. Quick Select is intended for
simple single table queries.

The pipeline uses the exact same options as when building a report. The
Quick select option allows you to select one table. If there are
referential relationships defined with other tables, you will be able to
select those too.
You might want too use the regular 'SQL Select' option instead of the 'Quick
Select'.

Be aware that if you want to pipe different tables and maintain their
structure on the new server, you will have to create different pipelines for
each table.
