Is is possible that using a DBClient 5.5.03 build 1666 to acess a
SQLAnywhere Server 5.5.05 build 2817 can cause the server to crash?

No specific problems that I recall, and clients are expected to work with
newer servers, at least within the major version. It would be easy enough to
try upgrading the clients to see if it resolves the issue for you.
