Are there any good sites that show off HTML5 for data-centric
applications? I've seen some flashy stuff in a couple of galleries, but
I haven't found anything that's data-driven and data-intensive.

There are a lot of HTML5 demos on the http://ietestdrive.com site as
well. They tend to be more feature focused, but thinks like Semantic
Notepad and the HTML Forms example might be useful to you.
