For Sybase 11.x, you should be able to use the following statements:

SP_DROPSERVER servername
GO
SP_ADDSERVER servername, class (either LOCAL or otherwise)
GO

Don't forget to change the interfaces (or sql.ini on Win) file as well
as the RUN_server file to reflect the new name..
